Dry Yeast Rehydration Conditions

Interested in giving dry yeast a try and have a rehydration question. From the instructions on Danstar's website, it states that distilled or reverse-osmosis water should not be used. For those of us with water unsuitable for brewing, any suggestions for a rehydration water recipe (salts, yeast nutrients) starting with RO water? Thanks in advance.

I would like to know how long dried yeast stored in the refrigerator (under 40 degrees F) can be expected to be useful?

For a homebrewer, dry yeast is much more convenient than liquid yeast. There are numerous strains of dry brewer's yeast that give very nice results for certain beer styles. However, the variety of dry brewer's yeast seems very limited.

Encouraging Yeast Growth

If I want to "grow" yeast fast what would be your suggestions. I have read if you keep a constant temp, O2, limit glucose to >.4% with stirring, yeast will stay in the respiratory (growth) state and grow rapidly. I have found limited info on the process. What would be the doubling rate if good constants were kept?
